Piggies-In-A-Blanket
(adapted from Chebe Bread Recipe Handout by Karen Lawton)
1 (7.5 oz)pkg. Chebe Bread mix
1 C. shredded cheese (Swiss or cheddar)
2 eggs
2 T. oil
1/3 C. water
Gluten Free cocktail wieners or hot dogs (bitesize pieces)
In a medium mixing bowl, blend mix, cheese, eggs, oil and water with a spoon. Mix well with hands for 5 minutes or until very smooth and well blended. (Add a little water if too dry; add cheese or tapioca flour if too sticky.) Separate dough into 20 pieces, place a cocktail wiener or hotdog piece on each ball of dough, roll up. Place on un-greased baking sheet, bake at 375 until golden brown, approx 25 min.
Summer Potato Salad
3 lbs. boiling potatos
1/3 C. minced fresh parsley
1 tsp. dried thyme
6 T. white wine vinegar
3 T. lemon juice
1 T. Dijon mustard
2 cloves minced garlic
6 T. olive oil
¾ C. thinly sliced onions or celery
Scrub potatoes and peel, if desired. Place in a 4 Qt. saucepan with cold water and cover. Bring to a boil and cook for about 20 min. or until easily pierced with a skewer but not mushy. Drain, rinse with cold water, and slice thinly. Place in a large bowl. Toss gently with the parsley and thyme. In a medium bowl, whisk together the vinegar, lemon juice, mustard and garlic. Slowly whisk in the oil. Pout the dressing over the warm potatoes. Toss lightly to coat the potatoes with the dressing. Add the onions or celery and toss well. Serve at room temperature or chilled.
Serves approx. 12.
Cherry Dessert

½ C. butter, softened
1 ½ C. rice flower
2 T. sugar
1 pinch salt
2 (21 oz.) cans cherry pie filling
4 egg whites
1 C. sugar
¼ tsp. cream or tartar
Mix butter, rice flower, sugar and salt to form crust. Pat into 9”x12” pan. Bake 15-20 minutes at 350. Cool. Spread 1-2 cans cherry pie filling (or any other fruit mix) over crust. Beat egg whites to form peaks. Gradually add 1 C. sugar mixed with cream of tartar and beat until very stiff. Spread on top of pie mix. Bake at 325 for 20 minutes.
Serves 12.
